Egg waffles were mostly made with ducks’ eggs in the past. As ducks eggs are now mainly used for salted egg yolk production and due to their higher costs, chicken eggs have replaced them. Traditional char-grilled egg waffles in Tai O are rarely found in the city these days since shops in town use gas or electric power instead.

 

The shop we bought the char-grilled egg waffles from is Tai O Wah Kei 大澳華記. Shop owner only use one iron pan to run his business, it made a huge contradiction with shops in city. In order to make maximum profit, city’s shop owner always use multiple iron pan thus to do more business. But in Wah Kei, he is a man with patience who make only one business at one time. People lined up in front of his shop and they didn’t mind how long it took them to wait. Maybe it is the magic of vacation mood.

 

The freshly grilled egg waffles was so hot that we couldn’t even grab it properly. The edges of the waffles was burned into dark and it tasted much dryer than the normal egg waffles. Of cause it was super crispy. Every bit of the waffles have a sightly taste of burning carbon and we finished it within 2 minutes.
